Food Allergies Getting Worse An estimated 3 million Americans suffer from food allergies overreactions of the immune system to certain food proteins and many of them are children who may be at risk for life-threatening reactions. Food allergies are more common than ever in the United States, and researchers are still trying to understand why. Physical reactions due to food allergies range from mild to severe and even deadly more than 300 people die every year from allergic reactions to food. Because every persons immune system is unique, just about any food can cause an allergic reaction in someone. But eight foods in particular cause 90 percent of all food allergy reactions: milk, soy, eggs, wheat, peanuts, tree nuts, fish and shellfish. Causes Normally, food alone doesnt create a response from the human immune system, which is the bodys defense against viruses and bacteria. In people with food allergies, however, their immune systems react by overproducing an antibody called immunoglobulin E (IgE), which circulates in the blood and causes the allergic reaction. People inherit the ability to form IgE through the genes of their parents, and a family history of any type of allergy including food allergy, hay fever, asthma or eczema is one sign that you may have some type of allergy yourself. But to complicate things, your allergies may not be the same type.
