Food Allergies Getting Worse An estimated 3 million Americans suffer from food allergies overreactions of the immune system to certain food proteins and many of them are children who may be at risk for life-threatening reactions. Food allergies are more common than ever in the United States, and researchers are still trying to understand why. In people with food allergies, however, their immune systems react by overproducing an antibody called immunoglobulin E (IgE), which circulates in the blood and causes the allergic reaction. People inherit the ability to form IgE through the genes of their parents, and a family history of any type of allergy including food allergy, hay fever, asthma or eczema is one sign that you may have some type of allergy yourself. But to complicate things, your allergies may not be the same type.
