Food Allergies and Intolerances. WHO HAS FOOD ALLERGIES? Almost one out of three people either say that they themselves have a food allergy or that they modify the family diet because a family member has a food allergy. But only about one in fifty children and one in one hundred adults have a clinically proven allergy to a particular food. The difference between this belief and reality is the difference between food intolerance and a food allergy. Food intolerance is an adverse reaction to a particular food that does not involve the immune system. Food intolerance also differs from food allergy in that more of the offending food is required to produce symptoms. The treatments also differ. Food intolerance may be caused by: Bacterial contamination of food Deficiencies of digestive enzymes Viral infections Some natural substances in foods such as wine and aged cheese. Food allergies, on the other hand, involve a response of the immune system. Allergies can result in some surprising symptoms, far removed from the gastrointestinal tract. A person with a food allergy might experience: Respiratory symptoms such as asthma or sneezing Skin symptoms such as rashes or hives Nervous system symptoms headache or dizziness Cardiovascular system symptoms such as rapid heartbeat Urinary symptoms such as blood in urine Gastrointestinal symptoms such as vomiting or diarrhea The most common food allergies include cows milk, ...
